If you’ve been watching our TikTok videos lately, you know that we’ve been experimenting with chicken Alfredo.

Typically, when I say “chicken Alfredo,” I’m sure your mind goes to a few different things.

Fettuccine.

Creamy Alfredo sauce.

Yummy broccoli and grilled chicken.

While that all sounds amazing, we have our own way of doing things here at Mortadella Head.

Over the last few months, we have invented three different chicken Alfredo dishes that we are sure you’re going to love.

And surprise surprise, none of them involve fettuccine Alfredo.

Yep, that’s right, we created a white lasagna.

Have you ever had one of these guys before?

I’m sure you know by now that we love our lasagna. All kinds of lasagna. There’s nothing quite like some meaty sauciness to compliment your pasta.

But sometimes, you just don’t want tomato sauce.

Lucky for you, this is where this white lasagna comes into the equation.

This lasagna has everything you never knew you needed.

Okay okay, we get it. We used rigatoni and not ziti.

Ziti is more than acceptable to use with this though, and the phrasing rolls off of your tongue better.

But trust me, this is just as delicious as it looks.

The secret?

The tiny bit of marinara sauce.

It makes the ricotta cheese nice and creamy, and eliminates the need to use an egg.

To be honest, I think it adds a nice robust flavor to everything, too.

Pair this with the cheesy, bitter broccoli rabe and the chicken, you’ll have a dish that’s so irresistible you won’t be able to put it down.

Chicken broccoli Alfredo may be one of the most popular dishes of all time.

Every single graduation party, birthday party, even funeral I’ve been to in my Italian family has had this as a part of the menu.

But we made this into a baked ziti.

And to be honest, it’s the best version of this dish that I have ever had.

Again, you want to be stirring some warm tomato sauce into your ricotta cheese mixture, that’s just a given.

But the secret is in the broccoli.

We douse our broccoli in tons of fresh chopped garlic, olive oil, salt, pepper, and grated cheese, and mix it all around so that every florette gets coated in all of that cheesy goodness.

The result?

A viral TikTok video.

That’s how you know it’s good.

What Do I Serve With All Of This?

Garlic Bread

Garlic bread is the most favorable side dish here, everyone loves it.

It’s so easy, you can make it with fresh or frozen rolls, fresh garlic or garlic powder, and any kind of oil you have on hand.

A little bit of garlic bread is a great way to spice up any dish.

Caesar Salad

This is my fiance’s most favorite salad, I make it all the time for him.

In terms of salads, you really can’t go wrong.

In my opinion Caesar salad is one of the best kinds of salad to serve with any pasta dish, as the dressing is on the lighter side, and compliments the heaviness of the pasta well. Give it a shot!

Brussels Sprouts

No matter what season it is, you can’t go wrong with brussels sprouts.

You can season these however you’d like, but I especially think they’d be great with pine nuts, chili powder, and bacon bits.

Sautéed Bell Peppers And Onions

One of the most classic Italian American dishes, sautéed peppers and onions are always a good idea.

People all over the United States eat this in their sandwiches, on their pizzas, and as side dishes to their pasta meals.

We condone all three.

Our favorite way to make these is linked above!

Kale Salad

Sometimes, a leafy kale salad is all you need.

Douse this in olive oil and parmesan cheese, massage the leaves by using a pair of tongs, and serve this easy side next to your chicken Alfredo dish.

This green salad will be a great addition to your dinner!

Arugula Salad

There’s nothing I love more than a nice, fresh arugula salad.

It makes for the most healthy meals, and is so easy to make.

I make mine by tossing some arugula with some fresh dill, lemon juice, olive oil, salt, pepper, and feta cheese.

You can also use parmesan cheese if you’d like!

Caprese Salad

If you’re Italian American, or even just American, you know how delicious a caprese salad is.

Even tomato haters tend to love this favorite!

The whole milk mozzarella cheese used to make this is the perfect complement to the creamy chicken alfredo dish, and is a great way to add some extra flavor to your chicken alfredo.

Rosemary Meat Rolls

If I’m ever in a pinch and need a quick recipe that will really wow everyone, this is what I’m making.

It’s so easy, and can be ready in under a half hour.

It tastes like something you’d order from a restaurant, your guests won’t believe that you made this one all on your own.

And it’s the perfect side dish for your chicken Alfredo!

Broccoli

Broccoli is one of my favorite side dishes there is.

You can sauté it, boil it, roast it, you name it.

It’s so good that I could even eat an entire head as its own main dish.

My favorite way to make it lately has been by roasting it. Toss it with some olive oil, grated cheese, salt, black pepper, garlic, and red pepper flakes, and put it on a baking sheet. Bake it at 400° for about 15 minutes—it’ll be perfect.

Bruschetta with Mozzarella

Bruschetta is one of the most popular appetizers of all time, so of course I’ll be recommending this for your side dish.

It’s delicious, fresh, and an absolute crowd pleaser.

We made it with fresh mozzarella, and it’s an absolute game changer.

Sautéed Spinach

Growing up, this was hands down my favorite vegetable, and to this day, it still is one of the best side dishes ever.

My mother would sauté it in tons of fresh garlic, olive oil, salt, pepper, and Italian seasoning.

It wilts down nicely, and practically melts in your mouth upon eating it.

Anyone who said that vegetables weren’t good clearly hasn’t tried sauteed spinach. Check out our recipe and try it for yourself!

Sautéed Dandelion Greens

This is the close cousin of spinach and broccoli rabe. Though we prefer to roast our rabe, dandelion greens are even more bitter, so for these, we would suggest you sautee them.

Use the exact same seasonings as you would for the sautéed spinach, and let your imagination run wild.

This is an excellent choice of vegetable for your chicken Alfredo. Trust us on this one!

Green Beans (Haricot Verts)

Green beans. Haricot verts. What’s the difference?

Spoiler, there is none.

Just that they’re a damn good side dish for your chicken alfredo.

No matter what variation of this dish you decide to make, one thing’s for sure: you’ll love it this way.

As an Italian, there’s nothing better than a fried meatball.

Even to this day, my favorite thing is when on a Sunday, I can snag a fried meatball right before it enters the sauce.

They’re super easy to make, and just as good fried as after sitting in the sauce for a few hours.

Because of how good they are fried, they make the perfect side dish to your main course.

Sauteed Sweet Potatoes

Sweet potatoes go good with absolutely everything.

They’re the perfect stand-in for regular potatoes when making french fries, the absolute best roasted vegetable there is, and of course, the perfect side dish to your chicken Alfredo.

It’s an easy way to make your dinner guests think that you spent a ton of time preparing their dish, when in reality, you whipped it up in minutes.

Cappuccino Cake

I’m totally a sucker for something sweet after my meal.

That’s why this great recipe is perfect.

It’s light, not overwhelmingly rich, and tasty, making it the perfect dessert to end a heavy meal with.

Last but not least is this delicious sauteed broccoli rabe recipe.

Now, if you know us, you know we love to roast our rabe. Roasting is our favorite way to prepare any green vegetables that come through our kitchen.

Which is all well and good, but sometimes, you just need a nice classic Italian dish.

Lucky for you, we’re willing to bet that this sauteed rapini dish is just as your grandmother used to make it.
