I fry my meat balls in salt pork. I use the meat loaf mix beef , veal And pork. Like u garlic, parsley, pecorino cheese S&P bread crumbs or bread soaked in water or milk. That’s my grandmother’s recipe. Salt pork gives them a nice flavor.
