When I noticed that it was difficult for people to find high quality, homemade Italian-American food that they can easily enjoy at home, I personally sprang into action…leading to the development of the greatest Chicken Parm freezer meal that you’ll ever experience!

First, let me tell you how I got involved with preparing and shipping Chicken Parmesan and lots of other homemade Italian-American food…

A few years ago, I was asked by some of our best customers at Mortadella Head to make lasagna that they could freeze and reheat at their convenience.  They said they loved buying the lasagna at the restaurant, but on busy weeknights it would be great to have it in the freezer ready to go. 

Shortly after launching the frozen lasagna, our customers started requesting other frozen Italian-American classics.

Like a man on a mission, I committed myself to a long culinary expedition to find the best frozen Italian-American dinners on the market.  I hit up frozen food aisles up and down the East Coast.  If I went on vacation or visited a new city, I made a point to check out the local grocery store.

I bought lots of lasagna, chicken parmesan and other types of frozen meals to see what was available.  I really didn’t find anything good enough to serve my family.

The Perfect Chicken Parm

Okay, call me a Chicken Parm perfectionist, but after months of research and trying dozens of frozen Italian-American dinners I knew I could do better.  I’m not saying all of the frozen meals I tested were bad, but none of them tasted like they were homemade.

None of them tasted like they were made by an Italian grandmother!

After every taste test I thought to myself, “Wow, if only I were the one creating these frozen dinners… I’d make sure the sauce was always made fresh with lots of basil, the chicken cutlets were fried to a perfect golden brown and the cheese was the best quality.”

It would have to have the perfect amount of tomato sauce.  It would need a combination of cheeses that work great together.  I’d use provolone cheese because it tastes great and melts well.  I’d grate a good quality pecorino Romano and aged parmesan cheese to add some flavor complexity.  I’d top it off with a really nice whole milk mozzarella cheese.

The biggest problem I noticed was the fact that most of the freezer cases at the supermarkets and grocery stores were filled with lasagna and pasta dishes made by big industrial factories.  These companies are pumping out millions of trays with cheap ingredients and poor execution. 

Most of the frozen meals I tried were bland, dry, and didn’t have enough tomato sauce on them.  I could tell they weren’t using fresh garlic in their sauce.  It was probably some version of cheap garlic powder. 

Every chicken parmesan casserole I tested from the supermarket frozen food aisle was pretty disappointing.  I usually found a single layer of processed chicken pieces and breaded chicken nuggets under a spoonful of watered down tomato sauce and rubbery cheese.  

Why wasn’t anyone making frozen Chicken Parmesan with real, homemade chicken cutlets?  The kind you find in an Italian grandmother’s kitchen.  Pounded out thin, coated in a good breadcrumb mixture, Italian seasoning and fried to perfection in quality olive oil.

And let’s not forget about a rich tomato sauce with lots of fresh basil.  

A good Chicken Parmesan says it all.  Many say you can tell a lot about a restaurant by the quality of their Chicken Parmesan. 

I say you can tell a lot about a person by the quality of Chicken Parm they eat.

What Makes Me So Sure?

First of all, Chicken Parmesan is an Italian-American staple.  I’ve never met someone who doesn’t enjoy a nice plate of chicken parmesan.  

But it’s a fairly new menu item in comparison to its origin dish.  Chicken Parm started to become popular in the mid 1900’s.

It was developed as a result of Italian immigrants enjoying the authentic melanzane alla parmigiana or Eggplant Parmesan.  When they arrived in America they found that meat was more affordable and available.  They substituted the eggplant with chicken and Chicken Parm was born!

People really like Chicken Parm.  People really want excellent Chicken Parm…especially if it doesn’t require a lot of work.

And Why Is Our Chicken Parm Superior?

Let’s talk about the chicken cutlets first.  They are made with boneless chicken breasts and chicken tenderloins.

We butterfly the raw chicken and lay the pieces out on a cutting board.  Then we cover the chicken with plastic wrap and pound it out with a big old fashioned meat mallet. This makes sure the cutlets are nice and thin.  The thinner the better when it comes to chicken cutlets. 

This is all done by hand in our kitchen.  We have people on our team that are trained to make sure all of our chicken cutlets are perfectly prepared.

In my experience, you always get the best results when you make one chicken cutlet at a time.  You can’t rush the process if you want perfectly thin chicken cutlets.

Once the chicken cutlets pass inspection they move on to the breading station.

Seasoning is a very important part of this process. We know from experience that adding flavor at every step is the best way to make a really delicious dinner.

After years of trial and error, we’ve come up with the perfect ratio of seasoning for the flour, bread crumb mixture and egg mixture. 

We combine bread crumbs with a proprietary blend of Kosher salt, freshly cracked black pepper, herbs and spices.

We crack every fresh egg by hand for the chicken cutlets.  They get beaten with a whisk until they are light and airy.

These are the details that are important.  Every step along the way is how it would be done in an Italian grandmother’s kitchen.

Breading the chicken cutlets is something that we take seriously. After conducting a great deal of research in the frozen food industry, I realized that none of the brands you find in the supermarkets are making anything by hand.  

This was my opportunity to create a tray of Chicken Parm that would set itself apart from the rest.  I was determined to create the only handmade Chicken Parm in the United States being shipped frozen.

So I developed a process where all of our chicken cutlets are hand breaded, one at a time, before they are fried.

Just like the Italian grandmother known for creating a hearty meal for her extended family every Sunday, we dredge each cutlet in flour, egg and breadcrumbs.

Then each chicken cutlet gets fried to a golden brown.  We use the highest quality oil and bring it to 350 degrees F to get maximum crispiness.  We make sure the oil is the perfect temperature to create the perfect crust to lock in the juiciness of the chicken.

Layers of Homemade Tomato Sauce and the Best Cheeses!

OMG!  That’s the cool way of saying “Holy Cow!” these days I guess.

This stuff is carefully layered with our homemade marinara sauce and the perfect combination of cheeses.  One bite and you know you’re eating something that is handmade with a great deal of love.

Traditional chicken parmesan is known for being made up of some variation of the following ingredients:  chicken, sauce and cheese.

But I guarantee that this will be the first time you get a baking dish in the mail filled with Chicken Parmesan that rivals the best Italian restaurant in the United States.

Most frozen Italian meals that you see in the supermarkets are covered in industrial versions of tomato sauce that are too heavy on the oregano.  They also use cheap versions of rubbery mozzarella that don’t have much taste.

When you make a tomato sauce, it’s important to use the best ingredients.  When you use the best ingredients, you don’t need to go overboard with the dried herbs.  Too little herbs and you have a bland sauce.  Too many herbs and it tastes like a bottle of perfume.

I’ve collaborated with my team of chefs to create a tomato sauce that was developed from the simplest authentic Italian recipes. 

It starts with the perfect amount of onions and garlic sauteed in high quality olive oil.  Then we add tomato puree that comes from tomatoes that were picked at peak perfection before being jarred up.

We season it with the perfect amount of salt and pepper and allow it to simmer slowly.  

We add fresh basil leaves to the sauce to give it that homemade aroma that reminds you of walking into a little family trattoria in Rome.  

The subtle taste of the fresh basil and ripe tomatoes will make your family think you made this classic recipe from scratch.  

Speaking of taste, I spent a lot of time putting together the perfect blend of cheeses.  

A Chicken Parmesan dinner needs to be cheesy, but it has to be the right combination of cheese.  

I made sure that the Chicken Parmesan recipe that I put my name on has three of my favorite cheeses.  I also discussed the cheese selection with some of the best Italian-American chefs I know and they all gave input.  

We needed a variety of cheese that would add great flavor, the right texture and be able to be frozen and reheated.  We decided on aged mozzarella, provolone and grated Parmesan and Pecorino Romano. These superior cheeses will help me build the Ultimate Frozen Chicken Parm Dinner. And they all play a very important role.

The mozzarella is a whole milk variety that brings a lot of richness and creaminess to the Chicken Parm.  This beautiful cheese sits on the top layer.  When I let the Chicken Parmesan bake in the oven, the mozzarella turns a beautiful golden brown.  That crispy cheese adds a lot of flavor to this beautiful dish.

I also like using a good quality mild provolone cheese.  The provolone has a slightly sharp taste.  I add it to the top of every single chicken cutlet. It also melts perfectly and gives you a great cheese pull.

Finally, every layer gets a good amount of Parmesan and Pecorino Romano cheese.  The Romano is an aged cheese made of sheep’s milk that’s very popular in areas surrounding Rome.  I grate it fresh off the block so that it gives as much flavor as possible to the dish.  I actually prefer grated Romano cheese to parmesan cheese. But that’s neither here nor there.

In case you haven’t noticed, my Chicken Parm isn’t just about the parmesan!  

But it’s still the Best Frozen Chicken Parm ever created according to many Italian-American food lovers.

How Big Are The Trays of Chicken Parm?

The Chicken Parm I’m talking about comes in a tray that weighs in at about 2 to 2 1/2 pounds.

The weight is in a range because, unlike the mass produced industrial frozen meals on the market, these ones are handmade. Each tray of Chicken Parm is unique, just like the chicken cutlets that we pound out and bread by hand.

Now some people may wonder what the dimensions of the trays are because they want to make sure they’ll have space in the freezer.  The trays we use to pack our homemade Italian food are 8.75 inches long, by 6.25 inches wide, by 1.75 inches deep.  

In other words, they are the perfect size for us to ship anywhere in the United States and the perfect size for you to put in your freezer.

Another reason I love the size of these trays is that I can neatly stack them in my freezer without taking up too much room.  I like having easy and delicious meals at my fingertips for whenever I need them.
