Ingredients and Substitutions
Vegetable oil: I recommend using extra virgin olive oil for your salad dressing because of its rich flavor. If you prefer a more neutral oil, substitute it with canola oil or avocado oil.
White wine vinegar: I prefer this vinegar because it has the tanginess I like in a dressing and it is less bitter than plain white vinegar. Apple cider vinegar or red wine vinegar would also be delicious.
Lemon juice: Fresh lemon juice is what makes this dressing so fresh and flavorful. Be sure to use freshly-squeezed lemon juice, not bottled juice.
Shallots: Shallots are one of my favorite things to add to a dressing. They make for a great texture when blended into the dressing while adding loads of mild onion flavor.
Garlic: Fresh garlic is absolutely delicious in this dressing, but garlic powder can work too.
Herbs: We will use a blend of dried herbs with Italian seasoning. Feel free to use different dried herbs, fresh herbs, or add red pepper flakes for a kick. Make the dressing your own by switching up the herbs.
Mayonnaise: Mayo adds a bit of creaminess to the dressing and acts as an emulsifier, so the dressing doesn’t separate immediately.

Ingredients
- ½ cup olive oil
- ¼ cup white wine vinegar
- Juice and zest of 1 lemon
- 1 small shallot
- 1 clove garlic
- 1 teaspoon mayonnaise
- 1 teaspoon sugar
- 2 teaspoons Italian seasoning
- ½ teaspoon sea salt
Instructions
- Combine all of the ingredients in a blender or food processor. Blend on high for a few seconds, until the shallot and garlic are pulverized and the dressing is smooth.
- Transfer to a mason jar and use as salad dressing or marinade. Store in the fridge for up to 2 weeks and give it a good shake before using.
