A few days ago I was given two lobsters.
It was quite the surprise, really.
I love receiving food from other people, especially because I love to cook so much.
But I can’t recall another time that I was given fresh lobster meat to play around with.
Lobsters are tricky, because once they’re fully cooked, they’re only good for a few days.
So, I had to think.
And when I started to think, I was reminded of my favorite Lobster roll I’ve ever had from Luke’s Lobster.
They use this delicious spice mix that’s made of thyme, oregano, and a few other ingredients, and every time I eat there, it’s my favorite part of my whole meal.
I was determined to recreate it.
But I didn’t have mayonnaise or anything else to make a lobster roll.
So, I decided to make a lobster grilled cheese, and it came out absolutely delicious.
It was a hit in my house, and it will be one in yours too.
Here’s how I did it!
Ingredients:
Lobster Meat: I did one lobster per sandwich, but of course, this is adjustable based on your supply. If you only have one lobster to use between two sandwiches, double up on your cheese and it’ll be perfect.
Cheese: I don’t know about you, but I’ll always be making my grilled cheese sandwiches with cheddar cheese. Although, gruyere would be wonderful with this too.
White Bread: A good grilled cheese is all about the bread. In this case, I used some fresh scala bread from Superior Baking Company in Brockton. I recommend trying them out if you’re local to the area!
Thyme, Oregano, Onion Salt, Kosher Salt, Black Pepper, Crushed Red Pepper: This will make up the spice mix that you’ll be using!
Butter: This is the best way to grill a grilled cheese sandwich and get the bread nice and crispy and golden brown. If you don’t have butter, you can always use mayonnaise!
How To Make This Lobster Grilled Cheese Sandwich Recipe:
Make your spice rub, and sprinkle it on top of the lobster. Mix thoroughly.
In a large frying pan, melt about ½ tbsp of butter over medium heat. Place a slice of bread down, and top it with the lobster mix and enough cheese. Put the other slice of bread on top, press together, and cover the pan to melt the cheese.
After about 3 minutes or until the bottom of the piece of bread is golden brown, flip the grilled cheese and repeat on the other side, until the bottom of the bread is crispy. You also can add more butter here if you need to to make sure each side of both slices of bread becomes nice and crispy.
Repeat the process, making as many sandwiches as you’d like. Serve with potato chips on the side, it’s the proper way to eat one of these.

Q: What kind of cheese should I be using?
A: I’d say cheddar, but people also love using gruyere or swiss. You can also opt for a combination of the two if you’d like!
Q: What is a good lobster to use for this?
A: 100% Maine lobster! You can also use Canadian lobster or spiny lobster too, if you’d like. In fact, a lot of the time I prefer spiny lobster the most (I’m an abomination to my New England roots, I know).
Q: How can I make sure that the lobster doesn’t become tough or overcooked?
A: Three words: Cover! The! Pan! By doing this, you don’t have to wait as long for the cheese to melt naturally. This way, the bread can toast faster as the cheese melts and your sandwich will be done in minutes. If you want to, you can also toast the bread for a few seconds before adding the lobster meat directly to it.
Q: Can I make this sandwich in advance?
A: I don’t recommend making the sandwich itself in advance, but you can always freeze or refrigerate the lobster meat to make this at a later day. In fact, that’s exactly what I did! Just cook the lobster, take the meat out of the shell, store it in an airtight container in the fridge or freezer, and you’ll be good to go.
Q: Can I make this in the panini maker?
A: Absolutely! Just make sure you butter all of the pieces of bread beforehand.
What To Serve With Lobster Grilled Cheese:
Wine: I always prefer a white wine with any seafood. A glass of pinot grigio would be perfect!
Side Dishes: When I’m having lobster, I need to eat it with potato chips and coleslaw. It’s like a right of passage to me, and makes for the ultimate comfort food experience.

Ingredients
- The meat from two lobsters, cooked and chopped into little chunks
- 1 cup of cheddar cheese
- 4 bread slices, I used scala bread
- 1 tbsp butter
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp oregano
- 1 tsp thyme
- 1 tsp onion salt
- 1 tsp crushed red pepper
Instructions
- Combine the salt, pepper, oregano, thyme, onion salt, and crushed red pepper in a small cup with a fork.
- Add the spice mix to your lobster meat. Mix well.
- In a large nonstick skillet over medium low heat, melt half of the butter. Place a slice of bread down, and then add half of the seasoned lobster meat and half of the cheese.
- Place the other slice on top, and cover the pan. Let cook for 2-3 minutes or until the bottom of the bread is crispy.
- Flip the bread over and continue the process on the other side, adding more butter to the pan if necessary, making sure to take the sandwich out when the cheese is melted and the bread is crispy.
- Repeat this process as many times as needed to make as many sandwiches as you’d like.
- Serve with potato chips and coleslaw.
