The first restaurant I ever had a peach bellini at was the Cheesecake Factory. I was blown away by how delicious it was! I’ve since had this classic cocktail served in lots of different ways, and Cheesecake Factory remains one of my favorites. It’s a good thing I’ve learned how to make a delicious copycat bellini at home!

I don’t recommend making this drink very far in advance. If it sits out for long, the ice will melt and the drink will taste watered-down. If you want to get it prepared beforehand, put some frozen peaches and ice in pre-measured bags and store them in the freezer. When you’re ready to make your peach bellini, dump the bag in the blender with your liqueur and prosecco and blend.

How do I store leftovers?

Because this is a frozen drink, leftovers don’t store very well. I recommend making the exact amount you’d like to drink so you can enjoy it fresh. Leftover peach slices can be frozen to make more yummy peach cocktails.

Ingredients

3 ripe fresh peaches, peeled and roughly chopped

1 cup prosecco

1.5 ounces peach liqueur

½ cup ice cubes

Peach slices and fresh mint for garnish


Instructions

  1. Combine all ingredients (except the garnishes) in a high-speed blender and blend on high until the ice cubes are completely pulverized.
  2. Add more ice or prosecco as needed to achieve an ideal consistency. 
  3. Garnish with peach slices and a sprig of mint, then enjoy with a straw.

Notes

Feel free to use frozen peaches, but reduce the amount of ice to maintain the proper consistency.
