A good steak and a glass of red wine is a combination that I love.
For years I’ve been trying to perfect the perfect ribeye steak on the grill and I think I’m pretty close.
My favorite way to cook a steak is a combination of flavors that my grandmother used to use when she made a steak.
The only difference is that she always cooked her steaks in a frying pan.
My grandfather didn’t like anything cooked on the grill. I remember him saying eating a steak cooked on the grill was just as bad for you as smoking a pack of cigarettes.
I always thought that was pretty hilarious.
Anyway, I’ve adapted my grandmother’s recipe. I take the ingredients she used to use and instead of a frying pan I use the grill in the Summer.
It’s the best steak marinade in my opinion. It’s quick, easy and uses really fresh ingredients.

What You’ll Need to Make This Grilled Ribeye Steak
You’ll be able to get all of these ingredients at your local grocery store.
Steak
Using good meat is important.
This recipe is focused on rib eye steak. You can use boneless ribeye steaks or bone-in ribeye steaks.
Bone-in steaks are known to have a bit more flavor than boneless.
The reason I like rib-eye steaks the best is because they have the perfect amount of fat marbling.
It’s my favorite cut of beef. That fat is delicious when cooked right.
This recipe will also work with a New York strip steak.
Garlic
Buy fresh garlic for this recipe. I suggest using American garlic instead of the garlic grown in China. It has much more flavor.
Parsley
It’s important to use fresh parsley for this steak recipe. I used flat leaf Italian parsley.
There’s something really nice about cooking on an outdoor grill in the Summer and using fresh herbs from the garden.
Olive Oil
I want you to use an extra virgin olive oil. It will add loads of great flavor when the steak cooks.
Seasoning
I like to keep it real simple. I use Kosher salt or sea salt and black pepper.
How to Make the Grilled Ribeye Steaks
Get ready to make the best ribeye steaks you’ve ever had.
You can do this on a gas grill or a charcoal grill. I usually use a gas grill.
This recipe only takes about 5 minutes of prep. I just chop up some fresh parsley and garlic and I’m ready to start cooking.
Step 1
Bring your steaks to room temperature. To get a perfectly grilled steak you never want to start with a cold steak.
Step 2
Chop up the garlic and parsley very finely. I like to try to get them as small as possible. When the garlic and parsley are minced up they flavor the meat better in my opinion.
Step 3
Coat both sides of the steak with olive oil. Make sure you get complete coverage. The olive oil is going to help give the steak a nice char. That olive oil will sear and give a beautiful flavor to the steak.
Step 4
Season both sides of the steak with salt and pepper. I like to used a lot of salt. It give the steak a good crust.
Step 5
Take the chopped garlic and parsley and massage it into the steak. Make sure you do it on both sides.
Let the steaks marinate for at least 20 minutes. You can even let them marinate overnight if you have the time.
Step 6
Preheat the grill. You want a really hot grill. As hot as you can get it.
Rub some olive oil onto the grill grates.
Step 7
Now it’s time to cook. We are going to put the steak on direct heat.
This method of grilling is going to give the steak a really good sear. It’s quick and easy too!
Place steaks on the grill and leave them alone!
I made a perfectly grilled ribeye steak by cooking it for 4 minutes on one side before flipping it.
Step 8
After 4 minutes I flipped the steak and let it cook for another 3 minutes. This is also without touching it.
Keep in mind that all grills are going to cook differently. That means that my experience probably won’t be the exact ribeye grill time for everyone.
The cook time will also vary depending on the thickness of the steak. Thick ribeyes will cook a little longer than thin steaks.
I made this recipe with a 1-inch steak. I was happy with the results. I ended up with a nice medium-rare steak.
Step 9
Now it’s time to let the steak rest. For the best results I like to let meat rest for at least 15 minutes. I find that this is a great way to get a really juicy steak.
Grilled Ribeye Steak FAQs
How do you know when a medium-rare steak is ready?
Cooking steaks on the grill is a skill. You can do it by timing how long the steak is on the heat, but this can get tricky.
A thick steak is not going to be the same as thinner steaks when it comes to cooking time.
The most foolproof way of getting the correct level of doneness is to use an instant read thermometer.
The rule of thumb for medium-rare is to have the center of the steak to be somewhere between 130-135 degrees F.
What are the correct temperatures for each degree of doneness when cooking steak?
If you stick an instant-read meat thermometer into the center of the steak, you’ll be able to rely on the following temperatures. This will work with any cut of meat.
A rare steak should be between 120 degrees F and 130 degrees F.
As mentioned above, a medium-rare steak should be between 130 degrees F and 135 degrees F.
A medium steak should be between 140-150 degrees F.
A medium-well steak should be between 155-165 degrees F.
A well done steak should have an internal temperature at least 170 degrees F.
What is the best way to buy rib eye steaks when cooking for a crowd?
When I’m having a cookout and I need a lot of rib eye steaks I like to buy a big prime rib.
Most people only think of buying a prime rib for special occasions like Christmas, Easter and other holidays.
A prime rib and rib eye steaks come from the same part of the cow.
The difference is that prime rib is a larger cut of meat that is usually roasted whole and then sliced.
I like buying the prime rib and slicing the steaks myself because I can control the thickness of the steaks. The thickness of a steak is a personal preference…even for me.
Sometimes I am in the mood for thicker steaks and sometimes I like something thinner.
I also save a little bit of money buying a larger cut of beef and breaking it down myself.
What is the best way to cook a ribeye steak indoors?
If the weather isn’t going to let you cook outside, don’t worry about it. You can still make a great steak in the kitchen using this ribeye recipe.
All you need is a good frying pan. You can use a cast iron pan, stainless steel pan or a non-stick frying pan.
The cooking process is pretty much the same whether you’re cooking indoors or outdoors.
What should I do with any leftover steak?
If there are some extra steaks on the dinner table when the night is over, don’t worry. You’re in for a treat the next day.
Steak & Eggs
I like to use it for steak and eggs in the morning. I cut the ribeye into thin slices first. Then I put a frying pan on medium heat with a pat of butter and a little olive oil. The combination of melted butter and olive oil adds so much flavor.
I warm up the steak all the way through and serve it on a plate with home fries and a couple fried eggs.
Steak & Cheese Sub
A ribeye steak and cheese is another great way to use the leftover steak. I like slicing up the ribeye steak and sauteing it with sliced onions and garlic on medium-high heat.
A put a few slices of American cheese on top of the steak and let it melt before I put it all into a nice fresh sub roll.
What to serve with your grilled ribeye steak?
There are so many options when it comes to side dishes that go well with steak. Here are some of my favorites.
- Spinach with garlic and parmesan cheese.
- Fried potatoes with peppers and onions.
- Caramelized onions and mushrooms.
- A quick pasta puttanesca is a nice side dish.
How to Grill the Best Rib-Eye with Garlic and Parsley

Ingredients
4 ribeye steaks
3–4 gloves of fresh garlic, minced
3 tablespoons of fresh parsley, minced
¼ cup of extra virgin olive oil
2 tablespoons of Kosher salt
1 teaspoon of black pepper
Instructions
- Massage steaks with olive oil
- Season well with salt and pepper
- Rub in the garlic and parsley
- Allow the steaks to marinate for at least 20 minutes
- Preheat grill to highest heat
- Rub grill grates with olive oil
- Place steaks on the grill for 4 minutes
- Flip steaks and cook on the other side for 3 minutes
- Remove steaks from the grill and let them rest on a plate for about 15-20 minutes.
