The Best Pan Fried Potatoes with Onions and Peppers

There is really nothing better than pan fried potatoes when they’re done right.  

Here’s why I love making them…

First of all, they are awesome. They are crispy and loaded with flavor.  

I like dicing them up on the smaller side.  This is really important.  

Keep reading and I’ll explain why. 

You don’t need any real cooking experience to make them.  

Skillet potatoes are such an easy recipe.  With a few simple ingredients and a little bit of effort they are a great addition to so many meals. 

It’s comfort food.  It’s a simple dish like sauteed potatoes that everyone appreciates.  

They go with everything.  You name it.  Eggs, steak, fish… whatever!  

Fried potatoes are a really versatile side dish.  

I love having home fries in the morning, but they don’t have to be breakfast potatoes.

They are an easy side dish for dinner too.  They go with steak, sausages, pork chops and fish.

They taste like a million bucks but they are a cheap dish to make.  You don’t need to break the bank when you make these.  Good food doesn’t have to be expensive. 

I don’t like to brag, but I’ve been told that I make the best fried potatoes around. My kids love them. 

 It’s a simple recipe.  I do it all on the stove top.  Pan frying is one of the best ways to cook potatoes in my opinion.

I’m going to show you how I make the best potatoes, peppers and onions recipe.

Here’s What You Need To Make My Sauteed Potatoes With Onions And Peppers

The ingredient list is simple.  You probably have most of the stuff in your kitchen already.  

I’ll give you exact amounts of each ingredient in the recipe card.

Potatoes

Obviously we need potatoes.  I’m not picky when it comes to potatoes.  I use what I have on hand.  

This recipe will work with just about any type of potato… russet potatoes, red potatoes, yukon gold potatoes or new potatoes. 

You can even use sweet potatoes. 

Onions

I use Spanish onions for the most part.  I always have a bunch in my kitchen.  

You can also use white onions or red onions if that’s what you have.  You don’t have to be picky.  

Peppers

I use red bell peppers usually.  I like using yellow and orange too.  The colors really make the dish look pretty.  

If you have green you can use them, but they aren’t as sweet.  

Garlic

​Get some fresh garlic.  I always think fresh garlic is the best.  A couple cloves is all you need for this recipe.

Oil

I’m a big advocate for olive oil.  I use it in just about all of my recipes that call for oil.  I normally have extra virgin olive oil on hand. 

Seasoning

In this recipe I use Kosher salt, black pepper, garlic powder and paprika. 

Even though I have fresh garlic in the recipe I think the garlic powder adds a lot of flavor.  The paprika is great for color and additional flavor. 

How To Make My Sauteed Potatoes With Onions And Peppers

​Once you have your ingredients ready it’s time to saute potatoes.

The first step is to dice the potatoes.  I suggest a small dice. I like a potato that’s diced up small.  It gives the best results when it comes to flavor and texture. The crispy ratio is much better when the potatoes are cut up small.

Here’s a Tip to Making Perfect Sauteed Potatoes

Here’s a trick I use when I saute potatoes. It’s an easy way to get evenly cooked potatoes. 

When your potatoes are diced,  put them on a plate and cover them with a wet paper towel. 

Cook them in the microwave until the diced potatoes are cooked all the way through.  It’s usually about 3 minutes.  

This step gives the inside of the potatoes a head start.  Now you won’t have to deal with potato cubes that are cooked on the outside and raw on the inside.  The goal is perfectly cooked potatoes.

You also need to dice your onion and pepper.  These should also be cut up into a small dice.  You really want all of your vegetables cut in similar sizes.  

Now get your pans ready. You’ll need 2 pans. 

It’s important to use a large skillet.  I don’t like to crowd the ingredients in the pan.  

You can use any large frying pan… a nonstick skillet or cast iron skillet are what I usually use.

Put a couple good glugs of olive oil on the bottom of the pans and put them on medium heat.  We need hot oil before we start cooking.

When the oil is hot, put your potato cubes in one pan.  Season them with salt and pepper.

Add the diced peppers to the other pan.  Season them with salt and pepper.

Let both pans cook at the same time.  It’s important that all of the ingredients are in a single layer to get a good sear.

After about 5 minutes add the diced onions and minced garlic to the pan with the peppers.  Season them with salt, pepper, garlic powder and paprika.   

Let them cook for another 5 minutes.  Cook it long enough to get caramelized onions. 

Flip the potatoes over when the bottom gets crispy.  Add the peppers and onions to the pan with the potatoes.  

Stir everything together, turn the stove up to medium-high heat and let it all cook together for another 10 minutes.  Stir occasionally to avoid burning.  

Add a little oil if you see that the pan is too dry.  You need enough oil in the pan to get crispy potatoes. 

When all sides of the potatoes are crispy and golden brown transfer the contents of the pan to a serving dish.

Do I have to use olive oil in this recipe?

I love using olive oil.  It’s not required. Some people like using vegetable oil because it has a higher smoke point.  

I think olive oil adds a lot of flavor, but you can use what you like.

What can I serve the sauteed potatoes and onions with?

This is one of those great recipes that goes with anything.  Put some fried eggs on top and serve it as breakfast.  

Serve it as a side dish with a steak or pork chops for dinner. 

If you’re a vegetarian, serve it as a main course with a nice salad on the side.

Ingredients

Scale

​3-4 medium potatoes, diced into small cubes

1 medium onion, diced small

1 red bell pepper, diced small

2 cloves of garlic, diced fine

1/2 cup olive oil

1 teaspoon Kosher salt

1 teaspoon garlic powder

1 teaspoon paprika

1/2 teaspoon black pepper


Instructions

  1. Add tablespoon of olive oil to large frying pan and put on medium heat
  2. When oil is hot, add potatoes to the pan and season with salt and pepper.  Cook for 5 minutes
  3. While potatoes are cooking add a tablespoon of oil to another large frying pan and put on medium heat.  Add diced peppers to the pan and season with salt and pepper. Cook for 5 minutes and add the onions and minced garlic to the pan.  Season with salt, pepper, garlic powder and paprika.  Stir together and let them cook for another 5 minutes.
  4. Flip potatoes in the pan and let them cook on the other side for 5 minutes.
  5. Add pepper and onions to the potatoes.  Stir everything together and allow it all to cook for another 10 minutes of medium-high heat.  Add more olive oil to the pan if necessary.
  6. ​Stir occasionally to avoid burning.
  7. When the potatoes are crispy on all sides transfer to a serving dish.  
  8. Enjoy!

  1. Yummmmm…. Just made this because I had all these ingredients on hand…serving it with a pork loin and a side salad, it’s absolutely fantastic, can’t wait to make it with eggs!
