Step 1: First, start by preheating your oven to 300 degrees Fahrenheit. Then whisk your eggs in a bowl and add salt and pepper, then pour them into greased muffin tins. Then sprinkle however much mozzarella cheese you would like on top of each one.
Step 2: This part is optional, but if you want, you can chop up some peppers and onions and add them to the eggs in the tin. You could also add meat if you would like, such as ham, sausage, etc.
Step 3: Bake them in the oven for 25 minutes. Once they are fully cooked, take them out and you can either eat one right then and there or put them in the fridge and reheat them in the microwave the next morning for 1 minute. Enjoy!
Granola Cups
This breakfast finger food is more on the sweet side, but still healthy. It is a granola cup filled with yogurt and berries, the perfect breakfast if you are not an egg-lover but still want to get your protein in. It will keep you full and is easy to eat when you are in a rush!
What You Will Need:
- 1/4 cup coconut sugar
- 2 tablespoons maple syrup or honey
- 4 tablespoons coconut oil
- 1 and 1/2 cups of old-fashioned oats
- 1/4 cup of pecans, chopped
- 1/4 cup of walnuts, chopped
- 1/2 cup of almonds, chopped
- 1 tablespoon of chia seeds
- 1 egg white
- 1/2 teaspoon of cinnamon
- salt
Toppings:
- 2 cups of vanilla Greek Yogurt (I like Siggi’s or Oikos, but it is your choice)
- Drizzle of honey
- Berries (blueberries, raspberries, strawberries)
- Banana (optional)
Instructions:
Step 1: Start by preheating your oven to 350 degrees Fahrenheit and greasing a muffin tin that can hold 12 muffins. To actually make the cups, start by melting your coconut oil and mix it with the coconut sugar until the sugar is dissolved.
Step 2: Then, in the maple syrup or honey, mix until combined. Add in the other ingredients such as the oats, pecans, walnuts, almonds, chia seeds, egg white, cinnamon, and salt.
Step 3: Then divide up your granola mixture and put an even amount into each one of your muffin tins. Press down the mixture and make sure there are no holes in the cups of the granola. Bake for 15-18 minutes until the granola turns golden brown. Before putting your toppings into the granola cups, make sure that they have completely cooled.
Step 4: Once they have cooled, you can top them with your yogurt, berries, and honey if you would like. Enjoy these granola cups!
