Perfect Pan Seared Scallops Recipe with Crispy Crust

Ingredients

Scale
  • 1 lb large sea scallops
  • 1 to 2 tablespoons olive oil
  • Salt to taste
  • Black pepper to taste
  • 1 tablespoon butter (optional)
  • 1/4 cup white wine


Instructions

  1. Pat scallops dry thoroughly with paper towels.
  2. Heat a heavy pan over medium-high to high heat.
  3. Add olive oil and heat until shimmering.
  4. Place scallops in the pan, leaving space between each.
  5. Cook without moving for 2 to 3 minutes until a crust forms.
  6. Flip and cook for another 1 to 2 minutes.
  7. Add butter if using and baste briefly.
  8. Remove scallops from the pan.
  9. Deglaze with white wine if desired and serve immediately.
