2 tablespoons olive oil
1 pound spicy Italian sausage
1 onion, diced
2 carrots, diced
2 celery stalks, diced
3 garlic cloves, minced
2 tablespoons tomato paste
1 cup green lentils
1 cup brown lentils or French lentils
1 can San Marzano tomatoes, crushed
6 cups chicken broth or chicken stock
1 bay leaf
1 teaspoon Italian seasoning
1 cup small pasta
Salt and pepper to taste
Water as needed
Instructions
- Heat olive oil in a large pot over medium heat.
- Brown sausage, remove with a slotted spoon.
- Add onion, carrot, and celery and cook until soft.
- Stir in garlic and tomato paste and cook for 2–3 minutes.
- Add lentils, tomatoes, broth, bay leaf, and seasoning.
- Simmer until lentils are tender.
- Add sausage and pasta and cook until pasta is done.
- Adjust thickness with water if needed.
- Remove bay leaf and serve.
