Italian Lentil Soup Recipe with Sausage and Pasta

Ingredients

2 tablespoons olive oil

1 pound spicy Italian sausage

1 onion, diced

2 carrots, diced

2 celery stalks, diced

3 garlic cloves, minced

2 tablespoons tomato paste

1 cup green lentils

1 cup brown lentils or French lentils

1 can San Marzano tomatoes, crushed

6 cups chicken broth or chicken stock

1 bay leaf

1 teaspoon Italian seasoning

1 cup small pasta

Salt and pepper to taste

Water as needed


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Brown sausage, remove with a slotted spoon.
  3. Add onion, carrot, and celery and cook until soft.
  4. Stir in garlic and tomato paste and cook for 2–3 minutes.
  5. Add lentils, tomatoes, broth, bay leaf, and seasoning.
  6. Simmer until lentils are tender.
  7. Add sausage and pasta and cook until pasta is done.
  8. Adjust thickness with water if needed.
  9. Remove bay leaf and serve.
