Homemade Vegan and Gluten-Free Breadcrumbs

Ingredients

  • 4 cups cubed stale bread (gluten-free bread for the gluten-free version)
  • 2 tablespoons olive oil
  • 1 teaspoon dried Italian seasoning
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon sea salt
  • ¼ teaspoon black pepper

Instructions

  1. Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper.
  2. In a large bowl, toss the cubed bread with olive oil, Italian seasoning, garlic powder, onion powder, salt, and pepper.
  3. Spread the bread cubes in an even layer on the prepared baking sheet.
  4. Bake for 15-20 minutes or until the bread cubes are golden brown and dry throughout.
  5. Remove from the oven and let cool completely.
  6. Once cool, pulse the bread cubes in a food processor until you achieve the desired crumb size – fine for stuffing, coarse for toppings.
  7. Store leftover breadcrumbs in an airtight container in a cool, dry place for up to a week.
