Ingredients

1 lb of your favorite mushrooms in ¼ inch slices
½ large onion thinly sliced
2 cloves of garlic finely chopped
2 tablespoons of olive oil
1 tablespoon of unsalted butter
2 tablespoons of balsamic vinegar
1 teaspoon salt
1 teaspoon pepper
1 teaspoon chopped parsley


Instructions

  1. Add olive oil to a large skillet and place on medium high heat.
  2. Add the onions to the pan and season them with salt and pepper. For best results, add the onions first because they take longer to cook than the mushrooms.
  3. When the onions start to soften and become translucent, add garlic to the pan. Let the garlic cook with the onions for about 5 minutes. If you notice that the onions are starting to burn, turn the stove down to medium heat.
  4. Add sliced mushrooms to the pan and season again with salt and pepper.
  5. Add the butter, parsley and balsamic vinegar to the pan.
  6. Allow the mushrooms to cook on medium high heat for an additional 5-10 minutes.
  7. Stir every so often with a wooden spoon and loosen up any browned bits on the bottom of pan.
  8. Transfer the mushrooms and onions to a bowl.
  9. Enjoy!
