Ingredients
- 1 pound pork sausage
- 1 tablespoon olive oil
- 1 cup chopped bell peppers
- 2 garlic cloves, minced
- 2 cups frozen hash browns
- 1 cup shredded cheddar cheese
- 8 large eggs
- ½ cup sour cream
- ½ teaspoon black pepper
- 2 tablespoons water
- Salt to taste
Instructions
- Preheat the oven to 350°F and grease a casserole dish.
- Heat a large skillet over medium-high heat. Cook sausage until browned.
- Reduce to medium heat, add bell peppers, garlic, and water. Cook until softened.
- Spread hash browns in a casserole dish. Spoon sausage mixture over top.
- Sprinkle cheddar cheese.
- Whisk eggs, sour cream, salt, and black pepper. Pour over the casserole.
- Bake for 40 to 45 minutes until set.
- Rest 10 minutes before slicing.
