Simple Italian Sausage Breakfast Casserole Recipe

Ingredients

  • 1 pound pork sausage

  • 1 tablespoon olive oil

  • 1 cup chopped bell peppers

  • 2 garlic cloves, minced

  • 2 cups frozen hash browns

  • 1 cup shredded cheddar cheese

  • 8 large eggs

  • ½ cup sour cream

  • ½ teaspoon black pepper

  • 2 tablespoons water

  • Salt to taste


Instructions

  1. Preheat the oven to 350°F and grease a casserole dish.

  2. Heat a large skillet over medium-high heat. Cook sausage until browned.

  3. Reduce to medium heat, add bell peppers, garlic, and water. Cook until softened.

  4. Spread hash browns in a casserole dish. Spoon sausage mixture over top.

  5. Sprinkle cheddar cheese.

  6. Whisk eggs, sour cream, salt, and black pepper. Pour over the casserole.

  7. Bake for 40 to 45 minutes until set.

  8. Rest 10 minutes before slicing.
