- 2 lbs baby carrots or whole carrots
- 3 tbsp olive oil (or extra virgin preferred)
- 2 tbsp honey or maple syrup
- 1 tbsp brown sugar (optional)
- 1 tsp salt
- ½ tsp red pepper flakes (optional)
- 2 tbsp fresh parsley or other fresh herbs
Instructions
- Preheat your oven to 425°F. Line a large rimmed baking sheet with parchment paper.
- In a small bowl, whisk together olive oil, honey, brown sugar, and salt.
- Place your carrots in a large bowl, pour the glaze over, and toss to coat evenly.
- Arrange in a single layer on the sheet pan. Roast in a hot oven for 20-30 minutes, flipping halfway through.
- Garnish with fresh herbs and serve immediately.
