Easy Honey Glazed Roasted Carrots

  • 2 lbs baby carrots or whole carrots
  • 3 tbsp olive oil (or extra virgin preferred)
  • 2 tbsp honey or maple syrup
  • 1 tbsp brown sugar (optional)
  • 1 tsp salt
  • ½ tsp red pepper flakes (optional)
  • 2 tbsp fresh parsley or other fresh herbs


Instructions

  1. Preheat your oven to 425°F. Line a large rimmed baking sheet with parchment paper.

  2. In a small bowl, whisk together olive oil, honey, brown sugar, and salt.

  3. Place your carrots in a large bowl, pour the glaze over, and toss to coat evenly.

  4. Arrange in a single layer on the sheet pan. Roast in a hot oven for 20-30 minutes, flipping halfway through.

  5. Garnish with fresh herbs and serve immediately.
