Easy Creamy Italian Sausage Pasta

Ingredients

  • 1 lb mild Italian sausage or spicy Italian sausage

  • 1 medium bell pepper, diced

  • 3 cloves garlic, minced

  • 2 tbsp tomato paste

  • 1 cup cherry tomatoes

  • ½ cup sun-dried tomatoes, chopped

  • 1½ cups heavy cream

  • 12 oz penne pasta

  • ½ tsp red pepper flakes (optional)

  • ½ cup parmesan cheese, grated

  • Salt and pepper, to taste


Instructions

  1. Brown the Italian sausage in a large skillet over medium heat and set aside.

  2. Sauté bell pepper and garlic in the same skillet, then add tomato paste and cook until slightly caramelized.

  3. Stir in cherry tomatoes, sun-dried tomatoes, and heavy cream. Simmer until the sauce thickens, then return the sausage to the pan.

  4. Cook penne pasta until al dente. Add to the skillet and toss with the sauce. Use reserved pasta water if needed to loosen the sauce.

  5. Stir in parmesan cheese and garnish with red pepper flakes before serving.
