Ingredients
- 1 lb mild Italian sausage or spicy Italian sausage
- 1 medium bell pepper, diced
- 3 cloves garlic, minced
- 2 tbsp tomato paste
- 1 cup cherry tomatoes
- ½ cup sun-dried tomatoes, chopped
- 1½ cups heavy cream
- 12 oz penne pasta
- ½ tsp red pepper flakes (optional)
- ½ cup parmesan cheese, grated
- Salt and pepper, to taste
Instructions
- Brown the Italian sausage in a large skillet over medium heat and set aside.
- Sauté bell pepper and garlic in the same skillet, then add tomato paste and cook until slightly caramelized.
- Stir in cherry tomatoes, sun-dried tomatoes, and heavy cream. Simmer until the sauce thickens, then return the sausage to the pan.
- Cook penne pasta until al dente. Add to the skillet and toss with the sauce. Use reserved pasta water if needed to loosen the sauce.
- Stir in parmesan cheese and garnish with red pepper flakes before serving.
