Whether I’m cooking for a weeknight meal or pulling something together for special occasions, balsamic roasted asparagus is always in rotation.


Ingredients

Scale
  • 1 pound of asparagus
  • 1 to 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar or balsamic glaze
  • Kosher salt
  • Black pepper


Instructions

  1. Preheat the oven to 400°F.
  2. Trim the woody ends of the asparagus.
  3. Toss asparagus with olive oil and balsamic vinegar in a small bowl.
  4. Spread on a baking sheet in a single layer.
  5. Season with kosher salt and black pepper.
  6. Roast for 12 to 15 minutes.
  7. Finish with balsamic glaze or lemon juice if desired.
