Crispy Parmesan Roasted Potatoes Recipe

  • 2 pounds potatoes, cut into even pieces
  • 3 tablespoons olive oil
  • ¾ cup finely grated parmesan
  • 3 cloves garlic, minced
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • Optional fresh herbs for serving


Instructions

  1. Preheat oven to 425°F.
  2. Pat potatoes dry and toss with olive oil, garlic, salt, and pepper.
  3. Spread evenly on a baking sheet, cut-side down when possible.
  4. Sprinkle parmesan evenly over the potatoes.
  5. Roast for 25 minutes without stirring.
  6. Flip potatoes and roast another 15 to 20 minutes until golden and crispy.
  7. Finish with fresh herbs if desired and serve immediately.
