- 2 pounds potatoes, cut into even pieces
- 3 tablespoons olive oil
- ¾ cup finely grated parmesan
- 3 cloves garlic, minced
- 1 teaspoon kosher salt
- ½ teaspoon black pepper
- Optional fresh herbs for serving
Instructions
- Preheat oven to 425°F.
- Pat potatoes dry and toss with olive oil, garlic, salt, and pepper.
- Spread evenly on a baking sheet, cut-side down when possible.
- Sprinkle parmesan evenly over the potatoes.
- Roast for 25 minutes without stirring.
- Flip potatoes and roast another 15 to 20 minutes until golden and crispy.
- Finish with fresh herbs if desired and serve immediately.
