The Best Pan Fried Potatoes with Onions and Peppers

Ingredients

​3-4 medium potatoes, diced into small cubes

1 medium onion, diced small

1 red bell pepper, diced small

2 cloves of garlic, diced fine

1/2 cup olive oil

1 teaspoon Kosher salt

1 teaspoon garlic powder

1 teaspoon paprika

1/2 teaspoon black pepper


Instructions

  1. Add tablespoon of olive oil to large frying pan and put on medium heat
  2. When oil is hot, add potatoes to the pan and season with salt and pepper.  Cook for 5 minutes
  3. While potatoes are cooking add a tablespoon of oil to another large frying pan and put on medium heat.  Add diced peppers to the pan and season with salt and pepper. Cook for 5 minutes and add the onions and minced garlic to the pan.  Season with salt, pepper, garlic powder and paprika.  Stir together and let them cook for another 5 minutes.
  4. Flip potatoes in the pan and let them cook on the other side for 5 minutes.
  5. Add pepper and onions to the potatoes.  Stir everything together and allow it all to cook for another 10 minutes of medium-high heat.  Add more olive oil to the pan if necessary.
  6. ​Stir occasionally to avoid burning.
  7. When the potatoes are crispy on all sides transfer to a serving dish.  
  8. Enjoy!
