3-4 medium potatoes, diced into small cubes
1 medium onion, diced small
1 red bell pepper, diced small
2 cloves of garlic, diced fine
1/2 cup olive oil
1 teaspoon Kosher salt
1 teaspoon garlic powder
1 teaspoon paprika
1/2 teaspoon black pepper
Instructions
- Add tablespoon of olive oil to large frying pan and put on medium heat
- When oil is hot, add potatoes to the pan and season with salt and pepper. Cook for 5 minutes
- While potatoes are cooking add a tablespoon of oil to another large frying pan and put on medium heat. Add diced peppers to the pan and season with salt and pepper. Cook for 5 minutes and add the onions and minced garlic to the pan. Season with salt, pepper, garlic powder and paprika. Stir together and let them cook for another 5 minutes.
- Flip potatoes in the pan and let them cook on the other side for 5 minutes.
- Add pepper and onions to the potatoes. Stir everything together and allow it all to cook for another 10 minutes of medium-high heat. Add more olive oil to the pan if necessary.
- Stir occasionally to avoid burning.
- When the potatoes are crispy on all sides transfer to a serving dish.
