Ingredients

- 1–2 lbs lean ground turkey
- 28oz crushed tomatoes
- 1 diced red bell pepper (can use green or yellow)
- 1 diced jalapeño
- 2 chopped white onions
- 1 minced cloves of garlic
- 1 can of green chilies
- 2 cans of beans, I used black beans and kidney beans
- 1 can/1 cup of corn
- 2 cups of chicken broth
- 1 tbsp salt
- 1 tbsp black pepper
- 1 tbsp cumin
- 1 tbsp chili powder
- ½ tbsp paprika
- ½ tbsp elote seasoning
- ½ tbsp oregano
- 2 tbsp olive oil
- Toppings of your choice, I used greek yogurt, cheddar cheese, and tortilla chips
Instructions
- In a large pot or dutch oven, heat up your olive oil over medium heat, and toss in your onions, jalapeño, and bell pepper. Season with salt and pepper, and saute until translucent.
- When your onions and peppers are done, toss in your garlic, and saute until fragrant.
- Throw in your ground turkey, and stir until the turkey is browned and cooked through.
- Once the turkey is done, add your chicken broth, beans (I include the juices), corn, crushed tomatoes, and chilies. Bring to a boil.
- Once the chili boils, add in the rest of your seasonings, stir, and bring to a simmer.
- Let the chili simmer for 1-2 hours. The longer it simmers, the better it will taste.
- Top with all of your favorite toppings, and enjoy!
