- 5 large eggs
- 1 cup Greek yogurt
- ¼ tsp pepper
- ¼ tsp paprika
- ¼ tsp crushed red pepper
- ½ tsp salt
- ½ cup total toppings of choice
- ¼ cup cheese of choice
Instructions
- Preheat the oven to 400°.
- In a blender, crack eggs, and add in Greek yogurt and seasonings. Blend until smooth.
- In a large greased muffin pan, spoon in or pour your egg mixture over every muffin cup, until everything is about halfway full (you may have one or two empty muffin cups).
- Add in your toppings of choice to each muffin cup, topping with your choice of cheese.
- Bake for 15-20 minutes or until the tops are fluffy and golden brown.
- Store in the refrigerator for 4 days or freeze for up to 3 months.
