Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup white sugar
  • ½ cup packed light brown sugar
  • ​1 teaspoon baking soda
  • ½ teaspoon salt
  • 3 very ripe bananas, mashed well (about 1 ½ cups)
  • 2 large eggs
  • ¼ cup Greek yogurt
  • ¼ cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup chopped walnuts or chocolate chips (optional)

Instructions

  1. Preheat oven to 350°F. Line a 9-inch loaf pan with parchment paper grease the parchment paper with vegetable oil or cooking spray.
  2. In a medium bowl, whisk together the flour, sugar, brown sugar, baking soda, and salt.
  3. In a separate large bowl, whisk together the mashed bananas, eggs, Greek yogurt, vegetable oil, and vanilla extract. Slowly add in the dry ingredients until just combined. Stir in the chopped walnuts or chocolate chips.
  4. ​Scrape batter into the loaf pan. 
  5. Bake the bread for 50 to 60 minutes or until a toothpick inserted comes out clean.
  6. Remove the bread from the oven and allow it to cool completely.
