Ingredients
16 oz fettuccine
4 sausages
2 tbsp fennel seeds
1 + ½ cup heavy cream
Extra virgin olive oil
2 cloves garlic
1 onion
Cooking white wine
Freshly ground black pepper
1 oz coarse salt
Fine salt to taste
Red chili pepper flakes (optional)
Just a bunch of parsley (optional, use sparingly)
Instructions
- Prepare the ingredients: Finely chop garlic and onion. Remove any green germ from the garlic. Remove sausage casings and chop into chunks. Add chunks to a skillet with oil.
- Heat pasta water: Bring a large pot of salted water to a boil.
- Prepare the sausage: Cook sausage over medium-high heat for 4-5 minutes, breaking it up with a spoon. Add wine to deglaze and simmer for a couple of minutes.
- Add aromatics: Add garlic and onion to the skillet and sauté for about 4 minutes.
- Add cream and fennel seeds: Reduce to low heat and pour in cream. Add fennel seeds and simmer.
- Season the sauce: Adjust salt and pepper. Add a pinch of red pepper flakes if desired.
- Cook the pasta: Add coarse salt to boiling water, then add pasta. Cook at medium heat until al dente, then drain, reserving some pasta water.
- Combine pasta and sauce: Add the cooked pasta to the sauce and mix well, adding some pasta water if needed.
- Finish and serve: Remove from heat, add grated cheese, and mix. Serve hot, garnished with more cheese and parsley if desired.
Notes
- I think that fettuccine is the best kind of pasta for this recipe. However, you can also use bucatini or short shapes like fusilli, penne, and rigatoni.
