Simple Ingredients

  • 1/4 cup chia seeds
  • 1 cup unsweetened almond milk 
  • 2 tablespoons cocoa powder (ensure it’s unsweetened and Paleo-compliant)
  • 12 tablespoons maple syrup or raw honey (adjust according to taste)
  • A pinch of sea salt 
  • 1/2 teaspoon vanilla extract
  • Optional toppings: Fresh fruit like berries or Paleo-friendly nuts 
  • Optional: Paleo-friendly chocolate shavings

Instructions

  1. Use a medium mix bowl or a mason jar and combine the chia seeds, cocoa powder, and a pinch of sea salt – either stir together the ingredients or shake them if you’re making them in a jar. 
  2. Next, add almond milk, maple syrup, and vanilla extract and whisk it together until it’s well combined and the cocoa powder is fully dissolved – it may look thin and watery but the chia seeds will swell and thicken the pudding as it all sets.
  3. Cover your bowl or jar with a lid of plastic wrap and refrigerate for at least 2 hours, or overnight – this will let the tiny black seeds absorb all the liquid and give you the desired pudding-like consistency. 
  4. Once the pudding is set and you have the desired thickness, give it a good stir to break up any clumps in this gel-like consistency – if it’s too thick, add a little more almond milk.
  5. Enjoy your chia pudding with various toppings like fresh berries, nuts, or even a sprinkle of unsweetened coconut flakes.
