Dry Ingredients:

  • 2 cups all-purpose flour
  • 1 tsp salt
  • 1/2 tsp baking soda
  • 1 cup brown sugar
  • Optional: 1 cup chocolate chips

Wet Ingredients:

  • 1/2 cup (1 stick) unsalted butter, melted
  • 2 large eggs, room temperature
  • 1 tsp vanilla extract
  • 1/4 cup sour cream
  • 1 cup mashed overripe bananas (3 medium or 2 large)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan or line with parchment paper.
  2. Mash bananas in a large bowl.
  3. Whisk together flour, salt, and baking soda in a separate large bowl.
  4. Combine melted butter, brown sugar, eggs, vanilla, and sour cream in another large bowl.
  5. Pour wet ingredients into dry ingredients and mix until just combined.
  6. Fold in mashed bananas (and chocolate chips, if using).
  7. Pour batter into the prepared loaf pan.
  8. Bake for 50-60 minutes or until a cake tester inserted into the center comes out clean.
  9. Cool in pan for 10 minutes before transferring to a wire rack to cool completely.
