Strawberry Balsamic Vinaigrette Recipe

Ingredients

  • 1 cup fresh strawberries, cleaned and hulled
  • 1/4 cup balsamic vinegar
  • 1/4 cup extra virgin olive oil (avocado oil is also okay, but may be a little strong)
  • 1 tablespoon honey (or maple syrup for a vegan version)
  • 1 small garlic clove, minced
  • Salt and pepper, to taste

Optional:

  • 12 teaspoons Dijon mustard (adds a nice zesty kick)
  • 1 tablespoon fresh basil or mint, chopped (for added freshness)

Instructions

  1. Put it in a food processor or blender:
    • Strawberries, Balsamic vinegar, Honey, Garlic
    • Blend it until it’s smooth – kind of like a smoothie.
  2. While blender is running on low setting, slowly add olive oil 
  3. Add salt and pepper to your liking 
  4. Add Dijon mustard (optional)
  5. Add fresh herbs like basil or mint (optional)
  6. Shake and stir before using, so it’s well mixed – voilá! Enjoy!
