Ingredients
Scale
- 4 cups green cabbage, shredded
- 1 cup purple cabbage shredded
- 1 cup carrots, shredded
- ½ cup yellow onions, finely sliced
For the dressing
- ½ cup mayonnaise
- 1 tablespoon apple cider vinegar
- 1–3 teaspoons of sugar substitute, to taste
- Salt and black pepper to taste
Instructions
- In a small bowl, mix your dressing ingredients thoroughly until well combined.
- Combine shredded cabbage, carrots, and onion in a large mixing bowl and mix. Add dressing then stir until the vegetables are thoroughly coated in dressing.
- Chill until ready to serve.
Notes
- Be sure to check the conversion of sugar to your sweetener of choice. Some of them may be substituted at a 1:1 ratio, but others will require a different amount to achieve the same sweetness.
- Instead of using a sugar substitute, feel free to skip the sweetener. The flavor will be different but still delicious.
- Instead of shredding your own cabbage and carrots, you can use a 14-ounce bag of coleslaw mix and add onions.
