Ingredients

4 ripe Roma or cherry tomatoes

1/4 cup fresh basil leaves, chopped

2 garlic cloves, minced

1/4 cup extra virgin olive oil

1 tablespoon balsamic vinegar or red wine vinegar

Salt and black pepper to taste

1 loaf of crusty bread

Optional: Parmesan cheese, fresh mozzarella, or a drizzle of balsamic glaze for topping


Instructions

  1. Prepare the Tomato Mixture: Dice the tomatoes and place them in a large bowl. Add the chopped basil, minced garlic, olive oil, and vinegar. Season with salt and black pepper. Let the mixture sit at room temperature for 15-20 minutes to allow the flavors to meld.
  2. Toast the Bread: Slice the bread into thick slices and brush each slice with olive oil. Place the slices on a baking sheet and toast in a preheated oven at 400°F until golden brown.
  3. Assemble the Bruschetta: Spoon the tomato mixture onto the toasted bread slices. For added flavor, sprinkle with Parmesan cheese or top with fresh mozzarella. If you like a touch of sweetness, finish with a drizzle of balsamic glaze.
  4. Serve: Serve immediately as a perfect appetizer or light meal. This bruschetta is also a great side dish for pasta or grilled meats.
